Apple Sauerkraut Pork Chops

This recipe is a variation on a household favorite but modified to be more Anglo-Saxon.  

Ingredients

  • 2 pounds of 1" thick boneless pork chops
  • 3 medium onions, chopped
  • 3 tart apples, such as Granny Smith, cored and sliced
  • 1 15-oz can sauerkraut, rinsed and drained 
  • 1/4 tsp cinnamon (opt)
  • 1/2 tsp pepper (opt)
  • 1 tbsp honey (opt)

Instructions

  • Place onions on bottom of crockpot.
  • Layer apple slices on top of onions.
  • Sprinkle spices on top of apples.
  • Slightly brown pork chops on a nonstick skillet for 3-4 minutes. Place over apples.
  • Top pork chops with sauerkraut. (See notes below if you are not a fan of sauerkraut.)
  • Cover crockpot and cook on low for 6-7 hours or until pork chops are tender. 

Notes

  • This crockpot recipe would replicate the process of slow cooking with a cauldron over a low fire.
  • If you are not a fan of sauerkraut, reduce the amount of the kraut and replace that volume with more apples and you'll be pleasantly surprised.
