This recipe is adapted from Libellus de arte coquinaria.
Ingredients
- Boneless skinless chicken breasts
- a slice of bacon for each breast
- sage leaves
- pepper
- cumin
- enough pastry dough dough to surround breasts
- melted butter
Instructions
- Dice bacon into pea size pieces
- Roll out enough dough to surround a breast
- Place breast on dough
- Cover with other ingredients and close dough
- Heat oven to 350 degrees
- Repeat for all breasts
- Brush melted butter on dough
- Bake pasty for 40 minutes
Notes
- I used spices from Libellus... recipes `Chicken Pasty' and `Chicken Pie'. Chicken Pie is more like quiche. Pie also suggests saffron.
- Of course, chicken can be replaced by beef.
