Chicken Pasty

This recipe is adapted from Libellus de arte coquinaria.


  • Boneless skinless chicken breasts
  • a slice of bacon for each breast
  • sage leaves
  • pepper
  • cumin
  • enough pastry dough dough to surround breasts
  • melted butter 


  • Dice bacon into pea size pieces
  • Roll out enough dough to surround a breast
  • Place breast on dough
  • Cover with other ingredients and close dough  
  • Heat oven to 350 degrees
  • Repeat for all breasts
  • Brush melted butter on dough
  • Bake pasty for 40 minutes 


  • I used spices from Libellus... recipes `Chicken Pasty' and `Chicken Pie'. Chicken Pie is more like quiche. Pie also suggests saffron.
  • Of course, chicken can be replaced by beef.
