Simmered Mushrooms

This dish is an adaptation of a recipe from The Forme of Cury, 14th Century English. Of course, all ingredients were available in the 10th Century.

Ingredients:

  • 1 pound mushrooms, sliced
  • 2 Cups vegatable broth
  • 1 bunch of spring leeks, both bulb and leaves sliced 
  • 1/8 tsp ground ginger
  • 1/2 tsp pepper
  • 2 tsp sea salt 

Instructions:

  • Simmer all ingredients at least 15 minutes

Notes:

  • We used a single `gigantous' leek in our stew instead. To make the leek tender, we simmered for a half hour.
