Apple Fritters

"Anglo-Saxon" Apple Fritters

Ingredients

for batter

  • 3/4 tsp dry yeast
  • 12 oz beer or ale
  • 1/2 C wheat flour
  • 1/2 C  whole wheat flour or rye
  • 1 tsp flax flour
  • 2 egg whites (or one egg or two egg yolks)
  • 1/2 tsp sea salt

other ingredients

  • 4 tart apples
  • At least 1" of oil in bottom of tall pot  
  • 1 tbsp powdered sugar
  • 1 tsp cinnamon 

Instructions

 

  • Warm beer to lukewarm
  • Add 1/4 C beer to medium sized bowl, add yeast and let sit for 10 minutes
  • Add remaining batter ingredients, mix, and let sit in warm place until doubling in size 
  • While batter is growing, slice apples, removing cores
  • While batter is growing, heat oil until drops of water boil quickly on its surface
  • Mix apple slices in batter until slices are coated
  • drop apple slices individually into oil and remove them when they turn brown
  • sprinkle fritters with cinnamon and sugar
